The theme of the event will be focused on how the food & beverage industry is being changed by technology. The purpose of this event is to introduce future expectations and trends to the food industry and give the participants the necessary tools and ideas to have a futuristic vision like our sponsor, fabricators extraordinary Alifab. 

Our theme for An Evening of Alchemy is: “It’s not magic, It’s the Future” for SIAL – the Salon International de l’Alimentation (The international EXPO). This pandemic has caused a fundamental shift in how we operate, and the Food and Beverage Industry is certainly no exception. Guided by the latest recommendations from the City of Toronto, as well as the Province of Ontario, we have crafted an event that meets and exceeds physical distancing guidelines in an exciting and innovative way that can be implemented throughout the industry. In keeping with the current limit of 50 in-person attendees, we have developed processes and design features that ensure guest and staff safety and prevent cross-infection.

In keeping with the theme, we will be showcasing a number of technologies that allow for physical distancing in the food and beverage industry. There will be a robotic bartender that is equipped with a full bar rail, as well as robotic servers, that are programmed to bring the plates to back of house. This use of technology limits human-to-human physical contact when serving food and beverages.

The piece-de-resistance is an innovative concept called “the Gear”. It is a top open bubble with enough space to hold chefs in the middle, who will prepare the evening’s menu. The bubble will be encircled by a circular table that will have five “splines” coming off it. Each spline is an eighteen-foot-long table, with a branded conveyor belt running in the middle of it for food delivery. Each person will be separated by a clear plexiglass guard, which have state-of-the-art transparent screen technology, built in. The “smart glass” will have a variety of programs related to the event and include: an app that allows guests to send their drink orders to the robotic bartender, video chatting platforms that allow guests to interact with guests seated at other splines, and an interactive game that turns the video screens at Yonge and Dundas into a large game of “Timeplay” or “Kahoot”

The main visual colours of the event are chosen as blue, purple, and fuchsia with neon effects and accents. The keyword “Future” at the centre, features various colours at the back, such as fuchsia, blue, and purple.

Each facet of the future: technology, creativity, and passion, is represented by each colour, respectively.  It represents the future, based on the accumulation of past and present. The neon effect brings the futuristic, exciting atmosphere into the main visual.  

We will implement the theme by using the colours on our logo; Blue, Purple, Fuchsia, White and Black.

  • Stuffed portobello mushrooms – baked portobello topped with Queso Oaxaca, a Mexican cheese, and breadcrumbs garnished with chives 

  • 3 cheese spanakopita – baked in a crispy light phyllo pastry, filled with Macedonian creamy feta, Greek kefalotyri and ricotta cheese 

  • Israeli wraps – falafel Kofta made in house baked falafel kofta seasoned with Mediterranean flavors with a grilled wrap; topped with tahini and green shug. Served with beet hummus, labneh, and pomegranate tabbouleh and Endive salad with a drizzle of extra virgin oil on the side.

  • BBQ Jerk Chicken – free range Ontario chicken served with a jerk coconut sauce, paired with roasted pineapple, served with Paraguay heirloom slaw with cilantro with a hint of crème fresh and a hint of lime juice 

  • Spiced Branzino – Mediterranean Sea bass, deboned and lightly pan fried over medium-high heat and topped with Piri-Piri eggplant, cherry tomatoes, pitted niçoise olives and capers, with pomegranate tabbouleh, crispy quinoa, and cilantro crème on the side. 

  • Cauliflower steak – grilled and lightly pan-fried for colour accompanied with curried vegetable zucchini, peas, and green beans, with tomato eggplant puree, lemon cilantro tahini, puffed rice, chilli her salad

  • Spiced Mayan chocolate cake – Peruvian dark chocolate cake with cinnamon and cayenne powder, topped with a chocolate butter cream glaze with an added touch of vanilla bean ice cream on the side, Garnished with fresh Ontario strawberries 

  • Fresh fruit mixed served in crystal wine class intertwined with fresh custard and topped with whipped cream.

Keeping with the physical distancing motto, “Less Faces, More Spaces”, we wanted to look for an urban outdoor space that would inspire awe. What better location than the “Heart of Toronto”, Yonge and Dundas Square. With its massive video boards, central location, and modern facilities, Yonge and Dundas provide a uniquely exclusive and awe-inspiring event to showcase. Yonge and Dundas Square hosts 2.3 million annual guests for food and beverage events, from large scale food festivals, to intimate private events, the Square has hosted it all.

ALIFAB 

Alifab’s mission is to develop and manufacture stainless steel sanitary equipment for companies working in the agri-food sector. Their VISION is to be the leaders as a Turnkey manufacturing equipment in the food industry. Founded 2009 in Quebec, Canada, these fabricators design stainless-steel equipment that meet the highest sanitary standard for the food industry needs. 

They will assemble, manufacture, and install their customs creations.  They are always seeking to improve everyday design to adapt to today’s and tomorrow’s visions.
